The difference between fresh and frozen scallops lies in their texture, flavor, and shelf life. Fresh scallops are caught and delivered straight to your plate, offering a delicate, sweet flavor, a smooth, juicy bite, and a pronounced oceanic taste. However, their shorter shelf life requires quick consumption to savor their full potential. On the other hand, frozen scallops are frozen immediately after being caught to preserve their freshness for longer. While freezing can slightly firm their texture, they remain a convenient and accessible option when fresh scallops aren’t available. Both forms showcase the versatility and excellence of Hotate, making them a global sensation.
